Macaroni Salad

Ingredients:

  • 1lbs Macaroni(dry weight)
  • 1 cup of Mayo
  • 1/3 cup Sour Cream
  • 1/8 cup Red wine Vinegar
  • 1/4 cup Apple Cider Vinegar
  • 1 - Bell Peppers (Diced)
  • 1 - Onion (Diced)
  • 3 tbsp Granulated sugar
  • 1/2 tsp Chili Powder
  • 3/4 cup cheddar cheese(hand grated)
  • salt and pepper to taste
  • Optional: 3 boiled eggs (Diced)

 

Instructions:

Step 1 -In a large pot bring water to a boil.  Next place the uncooked macaroni noodles in and cook until just past is done.  Now drain and place in a bath of ice water stirring well to remove starches and chill the pasta.  Now drain one last time while you prep the rest.

 

Step 2 -In a large Bowl whisk together Mayo, Sour Cream, Both vinegar, sugar, chili powder, salt, and pepper. 

Step 3 - dice your onion and green pepper in to small peices

Step 4 - Combine to the sauce bowl the marcarnoi, veggies and the cheese gently stirring until combined   :egg as well before mixing
