huevos ranchero eggs

Ingredients:

  • 3 eggs
  • 1 tbsp of butter, olive oil, or non stick spray
  • 2 tbsp of salsa
  • Cheddar cheese shredded
  • pinch of salt
  • pepper to taste

 

Instructions:

Step 1 - combine in a bowl the eggs and salsa and blend well.

Step 2 - heat pan to meduim and then add melt butter, or no stick oil .

Step 3 -  reduce heat to medium low(4 to 4.5 if you have numbers on you stove top) add egg mixture to the pan and cook mixing up every 30 seconds or so to not let it stick to the pan.  Cook untill eggs are thick and cooked fully.

Step 4 -  turn off heat or set on low(1 to 2 if you have numbers on you stove top)the cheese and still till melt and blended. 

Note: This is a supper cheap meal with the coast under .50cents a plate even with the toast.  It is also dealicious meal with a bit of butter toast on the side.(find jalapeno jello to add some amazing to the already amazing.  )

Country Gravey

Ingredients:

  • 2 Cups of 2% or whole Milk
  • 2 tables spoons of all purpose flour
  • 2 tbsp of butter
  • Salt and pepper to taste at the end.(traditionally about 1 tbsp of pepper or at least heavey in your opinion)

 

Instructions:

Step 1 - Heat a pan to med heat then add and melt butter .

Step 2 -  Drop the heat to med low(about 4 out of 10 if you have numbers) and add the flour to melted butter - stiring continuously for at least 2-3  mins.  Your are cooking and browning the flour at this point.  It will make the flour taste better.  It will look like a paste for a few minnutes but will thin out as it browns and that's what you are wanting to happen before step 3.

Step 3 - Set heat back to 4.5 to 5 depending on your stove top.   Slowly add in your milk about 1/4 to 1/3 cup at a time wihile stirring the mixture until smothed each time before add the next 1/4 to 1/3 cup of stock.  This smothing prosses will acutully give you a gravey faster and less lump than pouring it all in at once.  It will also speed up the thikening prosses as a whole.  Countinue this process untill all milk is in and it is the desired thickness.

Note: Test to make sure its ready first by dipping a spoon in the gravey and running you finger across the back of a spoon(without burning yourself).  If the gravey does not run into the spaced wiped clean from your finger, it is ready and will cool to thicken up in 5 mins or less off the heat.  This is great on biscuits and fried chicken.

Adam's Tacos

Ingredients:   

Seasonings

  • 1 1/4 tablespoon chili powder

  • 1 3/4 teaspoons ground cumin

  • 1 teaspoon sea salt

  • 1 teaspoon ground black pepper

  • 1/2 teaspoon ground paprika

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon crushed red pepper flakes

  • 1/4 teaspoon dried oregano

  • 1/4 teaspoon chipotle powder

  • 1/4 teaspoon red cayenne chilli powder

Other Ingredients: 

  • 1 pound ground beef
  • 2 Anaheim peppers
  • 1 Large onion(fist size diced finely)
  • 2 Bell peppers(diced finely)
  • 1 Jalapeno pepper(diced finely)
  • 1 Poblano pepper(diced finely)

Cheese choices: 

1 - cup mild cheddar shreaded mixed with 1 tablespoon of taco season

or

1 - Cacique Cotija Part Skim Milk Cheese

Instructions:

 

 Step 1 - Heat pan on medium heat.

Step 2 -Brown meat and drain grease into a bowl with a strainer.

Step 3 - Add meat and 4 tablespoons of seasoning mixture to the pan stirring into the meat for about 1 min.

Step 4 - Add 1 cup of water while stirring the fond(food slightly burnt to bottom of your of pan) off.

Step 5 - As you bring it to  boil, add a lid and reduce to medium high for about 20 to 30 mins until all water is cooked out.

Step 6 - Let rest 5 min to cool. 

Step 7 - Finish tacos with  - Your choice of flour or corn tortillas.Then add shredded cheese, taco sauce of your choice, shredded lettuce, sour cream. Then serve.

Baked Mac and Cheese

Ingredients:     Makes a 9x9 baking dish

  • 3 Cups of 2% or whole Milk
  • 3 tables spoons of all purpose flour
  • 3 tbsp of butter
  • 2 tbls Salt
  • 4 tbls black Pepper
  • 1 tabls white pepper(optional)
  • 2 tbps garlic poweder
  • 1/4 tbls redcyan chili powder - cubed
  • 1/2 lbs Colby Jack cheese - cubed 
  • 1/4 lbs Mozzarella - cubed
  • 1/4 lbs Munster cheese - cubed
  • 1/4 lbs Sharp chedder cheese - cubed
  • 4 oz cream cheese
  • 4 tbls of sour cream
  • Panco Itaian bread crums(or french's onions)
  • 1/4 lbs macaroni cooked al dente and rinsed with cool water

 

Instructions:

Step 1 - Heat a non stick pan to med low heat heat then add butter and heat until melted .

Step 2 - Add the flour and stir the with a spatula.  You want to cook the ruex until the it has browned.  This should take about 5 mins and the browner it get the better it will taste.  Just don't burn it!

Step 3 - Set heat Medim and add in your milk about 1/4 to 1/3 cup at a time wihile stirring the mixture until smothed each time before add the next 1/4 to 1/3 cup of milk(If its lumpy you have net heated it enough It will shooth out).  This smothing prosses will acutully give you a gravey faster and less lump than pouring it all in at once.  It will also speed up the thikening prosses as a whole.  Countinue this process untill all milk is added and smoth with no lumps.

Steph 3 - Add and stir in all seasons.  Then taste to make sure you don't need to add any personal touch with you own seasons.

Step 4 -  add all the cheese and sour cream.  Then bring back a boil stiring untill all the cheese is multed

Step 5 - In a Greased 9x9 baking dish add you macaroni and pour the cheese sauce over the macaroni.  Stir it all together until blended.

Step 6 - Baking at 375 in oven in the middle rack until startsto boiling edges.(about 15 mins)

Step 7 - add bread crumbs to the top until covered and return to the oven until they have browned to your desired color brown.(about 20 mins)

Mom's amazing green beans

Ingredients:    

  • 2  to 3 cans of green beans or 2 to 3 cups of clipped fresh beans
  • 1 kielbasa sausage(sliced to about 1/4" thick)
  • 1 tbsp salt
  • 1 to 2 tbls black pepper(depening on your taste)
  • 2 to 3 tbsp on olive oil
  • water
  • large skillet with a lid(teflon not recomended)

Instructions:

Step 1 - Heat a pan and olive oil on med heat.(it must have a lid for this)

Step 2 - Add the sausage has a good char on the edgesand the  pan has devloped good fond on the bottom of the pan.

Step 3 - Add about 1/3 a cups of water to the pan and use your spatula to scrape off the fond from the pan as it steams.(this will be alot of flavor added to the dish.)

Steph 4 - add the beans and saute for about 2 mins with cansned beand or 5 mins for fresh clipped beans.

Step 5 - Add and stir in all seasons and enough water to make an ever hight to the bean as sausage hight.

Step 6 - bring to a boil and put a lid on.

Step 7 - reduce to med low or simer till all the water is cooked out about 30 to 45 mins.

Note - to speed up you may remove lids and return to h meduis after to mins till the water has cooked off.  you will loose flavor is you speed it up to fast.
